4oz to Freedom

Day 2

Breakfast:

Chia pudding with strawberries, figs, and almonds

As noted in the previous post, this was pretty good minus the weird consistency, which you kind of get used to. If you don’t like tapioca pudding, I wouldn’t recommend it. Here’s what mine looked like:

Lunch

Niçoise Salad

This was actually really good. I would totally make this again, aside from the fact that it has like a million ingredients, and my damn eggs were too runny.

Snack

Carrots and hummus

Dinner:

Spaghetti Squash with Ground Turkey, Cherry Tomatoes, and Swiss Chard
I couldn’t find any damn spaghetti squash. AGAIN. Thanks, Jewel. Any time I want it they’re fucking out of it, so I subbed a small acorn squash. Cut it in half, rubbed some olive oil, salt, and pepper on it, baked it at 375 face up for about a half hour (maybe a little more), and scooped out half of it into a bowl. Topped it with the rest of the stuff, cooked as directed, aside from the fact that I made 8 oz of turkey instead of four because I looked at four ounces and was like…Oh, HELL no. Turned out that 4 oz probably would have been enough. Anyway, this was delicious. Good job, Buzzfeed.

Night snack

1 Banana, Chocolate, and Coconut Popsicle

Meh. As predicted, they mostly tasted like banana. Admittedly, my super classy presentation didn’t help their appeal much:

How to Boil an Egg

So Buzzfeed posted a new clean eating challenge. The masochist in me decided this would be a good idea. As with the previous incarnation, most of this looks good, some looks highly questionable. I think I will be passing on the leftover omelet on Wednesday, for example. Reheated eggs? No thank you.
I had every intention of starting this on Saturday, but then I woke up slightly hungover from Friday’s adventures and just really needed some pizza. As a result, I spent at least three hours on Sunday cooking and prepping and chopping and slicing and holy shit is this a lot of work.

Day 1:

Breakfast:

Banana coconut green smoothie

Not much to report here, the coconut water gives it a nice subtle flavor, but it makes it a little thinner than the smoothies made with almond milk I’m used to. I’d give this a 7/10, on a scale of ‘this is healthy so no matter how good it is it will never taste like the ice cream shake I actually want’.
Lunch:

Roasted vegetables with parmesan and hard boiled eggs

First of all, I hate onions and I’m not a big fan of fennel (which I discovered after attempting the last Buzzfeed clean eating challenge) so this required some substantial substitution on my part. I made the asparagus, as directed, and subbed some carrots, cauliflower, and half a can of quartered artichokes for the fennel and onion. I also used olive oil instead of canola because hello have you heard of this thing called flavor? Apparently not.

Secondly, I would just like to say that their ‘perfect hard-boiled egg’ instructions were a giant pile of steamy dog shit, as far as I’m concerned. Maybe the laws of physics are different on my stove, but my eggs came out most definitely in the category of ‘soft boiled’. I would say they needed at least two additional minutes, possibly more. Since they weren’t completely done, this also made them incredibly difficult to peel, as they’re still a bit gelatinous and stick to the shell more easily. What the shit, Buzzfeed? Anyway, once I managed to pry them from their calcium encrusted prison, I was able to almost quarter them, as shown in the photo. You can actually tell from the photo on Buzzfeed that their eggs were only slightly more well done than mine, so clearly they needed some more time.

Aside from the undercooked egg fiasco, which would have been less frustrating if I hadn’t been absolutely starving and really impatient, this meal was actually delicious.

Dinner:

Slow cooker salsa verde chicken with cauliflower rice and green beans

I made the chicken with a roasted serrano, tomatillo, and garlic salsa my husband had made last week. I also put it in the slow cooker on low for 7 hours instead of on high for 3.5.  It needed some salt, but it was pretty good.
I made the cauliflower according to their directions (mostly), but I forgot to add the soy sauce (woops). I also didn’t make it into ‘rice’. I attempted a ‘cauliflower fried rice’ meal a while ago which I found to be a massive waste of time, so I just chopped the cauliflower into florets like I normally would, browned it a little, put in some chicken stock and simmered it covered until it was tender. Pretty damn good. I’m sorry, but cauliflower doesn’t taste like rice, cauliflower doesn’t have the consistency of rice, and frankly, I think pulverizing the poor vegetable in a food processer is just unnecessarily depriving it of its natural texture, which I happen to like. You’re not making rice, you’re making cauliflower. Embrace it. If you want rice, make rice. Whatever.

Followed the directions for the green beans. They were fine. I’m not a huge fan of green beans, but I have no major complaints with this preparation.

Overall this was a totally decent meal. I threw some chives on top of the chicken and cauliflower as suggested, and I served the chicken with some extra fresh salsa as a sauce.

Night Snack:

Chocolate

Snack snack:

I didn’t make the broiled grapefruit today because honestly I was sick of being in the damn kitchen. I’m intrigued by it, though, so I’ll make it eventually. Stay tuned.

Next day prep:

Banana, chocolate and coconut popsicles

Made these, left out the coconut because I don’t really like shredded coconut. Totally blew off buying Dixie cups, so my brilliant husband suggested I put them into my silicone cupcake cups. I knew I married him for a reason. I also blew off buying straws/popsicle sticks, so I guess I’ll just be eating them with a spoon? Also, this made more than I expected. They seem like they will be good, though they mostly just taste like banana.

Chia pudding with strawberries, fig, and almonds

I’ve made some incarnation of this a bunch of times, so no surprises here. It’s a fairly tasty breakfast, other than kind of having the consistency of snot (sorry, but it does). The only challenge was finding dried figs, which my husband finally tracked down in the chip aisle next to the raisins. I assume these are what they meant? They’re actually pretty good, though as expected, they mostly taste like raisins. They mellow out a bit in the pudding and add an interesting texture. I was happy with it.

Lessons for the day:

1. Stop trying to murder cauliflower, people. It doesn’t want to make you be something you’re not, why are you projecting your insecurities onto it?

2. I need to have kids so I can make them do my chores for me.

3. Almond butter is $13 a jar. What is it exactly about almonds that make them better than peanut butter? Why do they think they’re so damn special? Fuck you, almonds. Fuuuck you.

I Don’t Roll on Shabbos

So I was invited to a seder a couple of weeks ago. I wasn’t actually aware when I agreed to go that it was pot luck. I have never been to a seder before, and therefore had absolutely no fucking clue what the hell one brings to a potluck Passover meal. After trolling the internet and having multiple people suggest ‘bagels and lox?’, one of my Facebook friends suggested matzo toffee. This sounded like it would be reasonably easy and probably tasty. Unfortunately, the seder happened to be a week AFTER Passover. As a result, the chain grocery store by my house only had either 5 lb boxes of matzo, onion flavored matzo, or matzo crackers. Unwilling to drag my ass to another grocery store in what would undoubtedly be a vain attempt at finding regular stupid matzo, I went with the crackers. The recipe is pretty straightforward: combine butter and brown sugar to make caramel, spread said caramel over matzo, bake until bubbly, top with melted chocolate and nuts, let sit until crunchy and hard, then break apart into pieces. I think I used this one, but there are a bunch of them out there and they’re all pretty much the same: http://allrecipes.com/recipe/amazing-passover-chocolate-toffee-matzo/.

First of all (which I expected), it’s much easier to spread hot caramel on sheets of matzo than on crackers. It wasn’t a complete disaster, and was actually easier than I thought it would be, but matzo sheets are definitely the preferred format.
Look how neat and orderly we are!

Cauldron of molten almost-caramel goodness

Still hanging in there smothered in delicious, delicious caramel

Oh, shit.

Secondly, this recipe tells you to bake your caramel for WAY too long. That shit was already starting to burn on the edges at around the ten minute mark. You can see it in the top part of the picture above. I’m glad I took it out when I did. I took another pinner’s advice and just dumped a crapload of chocolate chips onto the still hot caramel, waited a few minutes, and spread them around like frosting. That was way easier than melting them in a separate container. I also roasted the nuts for a while (about 10 minutes at 300, I think, just check on them a lot to make sure they don’t burn).  I let the whole thing sit out for a while until it came to almost room temp, and then stuck it in the freezer overnight.

Toffee having been removed from the freezer the next day, with two hours to spare for the party, dumbass me remembered that I lined the pans with wax paper (I do not take full responsibility for this, I had qualms, and my husband told me to proceed anyway) and said wax paper was now GLUED to the toffee. The recipe author used aluminum foil, which I am convinced would result in the same problem. Probably. It makes me feel better to think that at least. I spent about an hour trying to pry it off in little pieces before I completely freaked out and almost called the hostess to cancel. Having stepped away to gather my faculties and yell at my husband, I did some googling and decided that my best bet was to put a damp dish cloth on the wax paper and iron the crap out of it until the wax paper was tortured into submission. Yes iron. On the cotton setting, with steam. This ACTUALLY WORKED. I was able to remove the offending wax paper just in time to stick it back in the freezer while I took a shower to let it set back up since obviously ironing toffee tends to make it melt somewhat. Having emerged from the shower, I broke the toffee into pieces, bagged it, and set off for some Old Testament adventures.

PS this recipe made two large sheet pans worth of toffee. That’s enough to send about five people into diabetic shock. It does pretty much last forever, though, being candy and all, so I kept a bunch of it in the fridge and snacked on it over a couple of weeks.

The blurriness does not convey its true awesomeness, or its ability to completely ruin 2 hours of your day with wax paper-related mutiny

The seder turned out to be really fun, and there was a TON of food. Including (of course) another set of chocolate covered matzo someone else brought.

All things considered, the crisis was avoided at the last minute and the toffee was really fucking good, so I would make it again. Just butter the shit out of your sheet pans and skip the stupid wax paper.

Lessons for the week:

1. Fuck wax paper. Seriously.

2. The Rugrats Passover special is still one of the best episodes of anything. Ever. Let my babies go!

3. Apparently you’re not supposed to drink beer at Passover. Whoops. There’s no way I could have made it through all the required wine without a massive hangover the next day, so whatever. God should be happy I put in any effort at all.

Lousy Smarch Weather

Thursday & Friday (Days 12 & 13)

Breakfasts: Strawberries and a banana

Lunches: Leftover soup and chili

Dinners: Tofu Lettuce Wraps and Potbellys (Fail)

Well, I made it (sort of). I didn’t cheat all that much, and as of today I’ve lost 10 pounds total since January. Now it’s just a matter of keeping up the will power. I think I will attempt to eat clean more often; I bought my first spaghetti squash, which I will try next week. I’ll keep you posted on the results of that. Otherwise, I think it’s really just a matter of portion control. The tofu lettuce wraps were actually really good, but my husband marinated the tofu so I have no idea what was in it and so, unfortunately, I can’t share the recipe.

This weekend was an epic fail as far as the diet goes. Saturday we went to this amazing hole in the wall Cuban/Colombian restaurant in the back of a grocery store where I had chicken with yellow rice and fried plantains, and an empanada on the side. I was so full from this that I didn’t actually eat dinner, so maybe Saturday wouldn’t have actually been that bad if I hadn’t gone out Saturday night and had like 6 beers. Sunday I ordered Thai for lunch and Jimmy John’s for dinner. I guess I’ll be back on the wagon Monday; I have more strawberries and chili.

In other news, my March Madness bracket this year was anally raped this weekend. There’s 10 bucks I’ll never see again. Oh, and it’s snowing. Like….a LOT. It’s March 23rd. I get snow in March, I’m from Buffalo; it’s not that surprising. But this is a LOT of snow in March. I’m talking several inches, and it’s still really coming down out there. Lousy Smarch weather.

Lessons for the week:

1. Fatty can’t resist the lure of yellow rice and empanadas

2. I actually know someone who was on Intervention, and it turns out that her episode is my friend’s favorite episode. He was super excited that I knew her. Why I am friends with a person who has favorite episodes of Intervention is beyond me.

3. Apparently Barbie and Ken broke up and Barbie is dating some Australian dude named Blaine? This information was bestowed upon me by the same friend who loves Intervention. He is a many-faceted individual.

Echo Tria Archidea

Tuesday and Wednesday (Days 10 & 11)

Tuesday:

Breakfast: Overnight oats with blackberries (half recipe)
Lunch: Leftover chili
Dinner: Chicken souvlaki and quinoa tabouleh salad

Tuesday was pretty solid, diet-wise. Souvlaki is one of my favorite things ever, I make it even when I'm not dieting:

Marinade/Sauce for Tabouleh Salad:

1/2 c olive oil
4 cloves garlic, chopped
Juice of 2 large or 3 small lemons, plus zest of one
1/4 c chopped oregano
1 tbsp red wine vinegar
salt & pepper

Whisk all ingredients together in a large bowl until combined. Divide in half. I used half of this to marinate about 1 1/2 lb of chicken (boneless skinless breasts sliced into about 1 inch strips), and the other half for the tabouleh salad. Let the chicken marinate for at least an hour, longer if you can, but not overnight. Skewer those bad boys and grill them. If I wasn't avoiding bread, I would normally serve this over a salad with greek dressing, feta, and tzatziki, with warm pita bread.

Quinoa Tabouleh Salad

1 c cooked quinoa
1 c chopped cucumber (seeded)
1 c grape or cherry tomatoes, halved
Feta cheese (I probably used 3 tablespoons-ish, but throw in however much you like, just be aware that it's salty)

Combine all ingredients with remaining sauce from above recipe, refrigerate. Add more salt if needed. I was surprised at how good this was, honestly.

Wednesday

Breakfast: Banana
Lunch: A whole bunch of crap from my boss' party
Dinner: Potbelly's

Diet: FAIL. My boss' last day was today, so I got elected to co-chair her going away party, which I HATE, by the way. All things considered, it turned out pretty well in the end. Our supervisor gave us $100, with which we acquired a cake from Sam's Club (which was excellent, actually. I don't love cake, but they have this whipped cream frosting that's really light), a $25 gift card, and a ton of appetizers including guac, salsa, hummus, a cheese plate, taco dip, a veggie tray, and chips and crackers. Other than the cake, I don't think this would have been horrible for my diet. Guac, hummus, cheese, salsa, and veggies are definitely allowed. Dinner, however...I was just too exhausted to do anything. We had our first day of bird rescue today also, which means I was up at five and downtown until 8 walking the city looking for injured birds. Of course there weren't any. Then the stress of planning this party and the trek to and from Jewel....there was no way I was cooking when I got home. We tried to order Jimmy Johns but their fucking website was down so I got a wreck from Potbelly's. Oh well, hopefully I'll be back on the wagon tomorrow.

Lessons for the days:

1. Jewel's spicy guacamole is really fucking good. Seriously. I was surprised too.
2. I'm still mad at Jimmy John's.
3. It's amazing how quickly 15 adults can down an entire sheet cake. A bunch of them are in my weight loss group. Apparently I'm not the only one having a cheat day.
